I wanted these to make “arroz con chorizo” (rice with chorizo) and “guisado de garbanzos con chorizo” (chick peas and chorizo stew).
These chorizos are kind of hard, so I thought that they weren’t going to work for this, but I was wrong. The rice turned out to be delicious and I can’t wait to taste them with the chick pea stew.
These are really flavorful and are the real deal!
Strong taste and perfect for Tapas.
They got here in perfect condition, with no signs of the mold mentioned in other reviews. They were also easy to chew without any of the bits and pieces also mentioned in other reviews.
Based on all this I would buy this product again, and give it five stars.

This is a wonderful Chorizo. I am a little sad they dont let the natural mold that forms on the casing like the ones you find throughout Europe. The mold which is safe, adds to the rich flavor of a well aged Spanish Chorizo. Im just happy that the USDA and FSIS allow the importation of this mold or no mold.

Ahhh, chorizo. Why are you so delicious, and yet... so unavailable?

I think chorizo is playing "hard to get" with me... it's never available at any of my local supermarkets except in the Mexican variety (which is ground and not dried like this type). If it IS available (Whole Foods, Fresh Market, etc.) it's INSANELY expensive. I cut back a star here, because it's basically no cheaper to get it online than it is to get it from the store. The one benefit is that I don't have to drive for 20 minutes to go pick it up, so that's why I appreciate the convenience of ordering it online.

This chorizo was very good. It rendered a nice amount of delicious fat into the pan, and it tasted awesome in the paella that we like to make with it. I think next time I will go for a more spicy variety though. I've never bought anything but mild chorizo in the past, but I think this one was a little too mild for my taste. It was missing that sort of strong... paprika/pepper combo flavor that I really enjoy in chorizo. So just keep that in mind when buying - yes, it's delicious, yes, it gives off a lot of yummy fat, but no, it is NOT the most flavorful variety of chorizo out there.
